This is one of the easiest white sauce recipes that blends well with any kind of pasta. I love the flavor of mushroom and how it complements the pasta. You can use any type of mushroom for this recipe or even add a little bacon. This recipe can be a little heavy because of the cream and cheese that gives it its flavor. Nonetheless, it’s delicious if you’re in the mood for a carb loaded meal.
- 1 packet uncooked spaghetti
- 150 grams of button mushrooms
- 1 cup olives
- 2 tbs olive oil
- 1 pod of garlic
- 3 table spoons of butter (unsalted)
- 4 table spoons of all purpose flour
- 1 cup half and half / Milk
- 1 tbs pepper powder
- Chilly flakes
- 1/2 cup grated Cheese
- Salt to taste
Finely chop the the garlic and mushroom
Boil the spaghetti adding a drop of oil and a table spoon of salt to the water.
You can add a blob of butter over the drained spaghetti and set aside.
In a saucepan,
Add the butter and fry the garlic. Once golden brown, add the mushroom and olives.
Strain the mushroom, olives and garlic. Using the same pan, add the flour and lightly fry in the butter.
Then, add the milk and stir till a smooth paste is formed. Then add in the cheese,chilly flakes, pepper and oregano and bring to boil.
Your sauce is almost ready.
Once you’re happy with the consistency, add some salt and then you can throw in the spaghetti and the mushrooms you have set aside.
You can garnish with some more cheese and parsley.
