Prawn Ghee Roast

Prawn ghee roast is a spicy, finger licking mangalorean side dish that can be put together in just a few minutes!

I love prawn since it cooks so quickly and its just close to impossible to go wrong with the flavours!

I’ve always relished the ghee roast in Manglorean restaurants. Little did i know it was so easy to make!

Marinade time: 1 hour

Cook time: 15 mins

Ingredients:

Ghee roast powder:

  • 2tbs coriander seeds
  • 2 tbs cumin seeds
  • 1 tbs fenugreek seeds
  • 2 cashews
  • 10 peppercorns
  • 1 tbs chilly powder
  • 1/2 tbs tumeric powder
  • 1 cinnamon stick

Roast the above ingredients and grind till you make a fine powder.

  • 1 onion
  • 2 pods of garlic
  • 1 small piece of ginger
  • 1/2 tomato
  • Hand full Coriander leaves

Dice the above ingredients and set aside

  • 14-15 medium sized prawns.
  • 2 tbs ghee
  • Half a lemon
  • Salt to taste

Method:

Wash the prawn, devein them and set aside. You can leave the shells on if you like.

Marinate the prawn in the ghee and 2 and a half table spoons of the fine ground powder and lime. Set aside for an hour.

In a pan,

Add 1 tbs of ghee.

Throw in the ginger and garlic followed by the diced onion.

Fry well till golden brown and then add the diced tomatoes. Continue to fry.

Once fried well, add the marinated prawns.

Allow it to cook for 10 mins undisturbed.

Add salt to taste.

Garnish with Coriander leaves.

There you have it, your spicy, delicious prawn ghee roast!

Serve with white rice or roti or even have it by itself! 💁
