Stuffed Bombay Ducks

Bombay duck, Bombil in Marathi, bomballo in Bengali and known in various other languages, native to the waters of Maharshatra is actually a fish and not a duck.

12 years ago, my family and I went for dinner at this seafood restaurant, Gajalee, known for their crispy fried Bombay ducks. The waiter that day said, we’ve got a new dish called the stuffed Bombay duck, would you like to try it? And try it we did. My grandmother, being a great cook has this habit of guessing the ingredients and then trying it out at home so we don’t eat outside. Since then we’ve been making Bombay ducks stuffed with prawn at home itself and it is ravishing. So here is a recipe for a prawn paradise engulfed in a crispy Bombay Duck wrap..

Ingredients:

  • 12 Bombay ducks
  • 1/4 kg prawn ( either diced or whole)
  • 6 pods of garlic
  • one small piece of ginger
  • Hand full coriander ( cleaned and washed)
  • 3 green chilies
  • 1 onion
  • 1 tbs stew powder ( https://lacocinadecristelle.wordpress.com/2016/07/06/stew-powder/ )
  • rice flour
  • Salt to taste
  • 2 tbs red chilly powder
  • 1 tbs tumeric powder
  • Lime juice
  • oil for frying

 

Method:

Wash and clean the prawn. Keep aside.

Clean the Bombay ducks thoroughly and make sure you have deboned it well.

Apply salt and lime and place in a strainer with a weight on top to drain the excess water.

Grind the garlic, ginger, green chilies, stew powder and make fine paste.

In a frying pan, 

Heat one tbs oil and fry the onions till golden brown. Add the green paste. After the green paste has fried, add the prawns and allow it to cook for 5 mins. Add salt to taste. Your filling is ready. Set aside to cool.

Once the water is out of the Bombay ducks, marinate it in chilly powder, lime juice, salt and tumeric.

In a plate, spread rice flour and follow procedure below..😊

Once coated well in rice flour, heat the oil and fry till golden brown.


And there you go…stuffed Bombay duck is ready to be served…😍
