Guava cheese, also known as ‘perad’ in Goa and Mangalore is a traditional Christmas sweet. These delicate, melt-in-the-mouth chunks of happiness are made from the peal and kernel of the ripe guava rich in vitamin C. I learned this recipe from my Aunt who made it every year for Christmas. This year, I decided to give it a shot myself..
- Ripe guava
- 2 tbs lemon juice
- 1/2 tbs vanilla essence
- red food color
- 3 tbs butter
Note: The guava pulp and the sugar must be in equal parts.
Recipe for pulp:
Steam the ripe guavas and cool.
separate the seeds from the skin.
Blend the peal to make smooth paste.
Measure this quantity. Add equal parts of sugar.
Combine all into a dish.Add the lemon juice and the food color.
Keep stirring till it leaves the sides of the dish. This may take at least 1 and a half to two hours. ( did I mention this sweet is very tedious to make?)
Butter the pan in which you will pour the sweet to cool down.
Pour and flatten it out. make sure the thickness is even. Allow it to cool for about an hour.
Once it has cooled down, cut into tiny diamonds.
