The Cheesecake Brownies

Brownies are the most versatile in the baked goods category. They taste amazing when coupled with almost anything. While ice cream and cookies are usually preferred with a chocolate brownie, I decided to top it up with a basic cheesecake topping. And boy, that was a good decision!

Ingredients

  • 150 gms dark cooking chocolate
  • 3/4 cup butter
  • 3/4 cup castor sugar
  • 1/4 cup brown sugar ( for the chewy texture)
  • 3/4 cup all purpose flour
  • 1 tbs vanilla essence
  • A dash of lemon zest
  • 1/4 tbs baking powder

For the cheesecake topping:

  • 1 cup cream cheese
  • 3/4 cup castor sugar
  • 1/2 cup whipping cream
  • 2 tbs softened butter
  • 1 tbs vanilla essence
  • 1 egg
  • 1/4 cup crushed biscuits. ( digestive biscuits should work)

Method:

For the brownie:

Melt the chocolate and combine with the butter till smooth paste is formed.

Separate the yolks from the white. Combine the sugar and the yolks. Add the chocolate and butter mixture to the yolks and fold. Beat the egg whites well and add the froth and fold gently.

Sift the flour and baking powder and add into the mixture. fold gently.

Line a baking dish with parchment and pour the brownie mixture in.

In another mixing bowl,

Combine the ingredients for the cheesecake.

Pour it onto the brownie mixture in the dish.

img_2234 Crush the biscuits and top it up evenly over the cheesecake layer.

Pre-heat the oven to 160 degrees.

Pop the dish into the oven. Bake for 40 minutes.

img_2241 Once done, cool for at least 20 mins. Cut into slices. make sure you clean your knife after every cut. There you have it, cheesecake brownie. You can either enjoy it warm, or chill in in the refrigerator for 4 hours.. It tastes better when chilled! 😀
